In this case 'meest' refers to the adjective 'favoriet' and not to 'soorten'. So we can not use 'meeste'

Softijs en italiaans ijs zijn de meest favoriete soorten in Nederland. Meest verwijst hier niet naar soorten, maar naar het adjectief favoriet. Vergelijk met "Het meest dure huis" dat betekent "het duurste huis", niet het meeste huis. Probeer het zo maar uit te leggen.

Why do you say "meest" instead of "meste"? Isn't it linked to the word "soorten" which is plural?
