Thank you for your question and you are right, if would have used the noun (boek) in the sentence it would be "dit boek?" "dat boek". Now comes the confusing part, "deze" and "dit" originally refer to distance, something that is close to the speaker. And with "die" and "dat" you refer to something that is away from the speaker. So imagine the two people in the conversation, the sales person is maybe standing on ladder and is pointing to book far from the customer who wants to buy that one. "deze?" ( close to the person who is saying "this one?")...Ja, die. ( "yes, that one") the customer responds while pointing at the book far from him/her.


When there are no nouns, try to keep the distance from object to speaker in mind.
